I remember the first time my mom made Chicken Lemon Rice Soup, it was pretty good, but maybe it needed just a slight adjustment.
So the next time I made the soup I decided that maybe if I doubled the amount of lemon, it would be just a bit better. So I doubled the lemon, took a brief walk and came home to the smell of Mr. Clean; yes, maybe I did add just a tad too much lemon.
This past Monday was a snow day, and once again I thought Chicken Lemon Rice Soup would be the perfect smell. Once again I added a little more lemon, and added a little more lemon flavouring, and as I didn’t have plain rice, I made do with what I had in the cupboard. Twenty minutes later, my home had the great smell of lemon, with a slight burned smell. LOL, yep, the rice burned to the bottom of the pot.
Lesson learned: Don’t mess with the perfect recipe, don’t adjust what works.

Chicken Lemon Rice Soup
|¼ cup Chicken Soup Base||1/3 cup lemon juice|
|4 cups of Water||Dill to taste|
|1 cup cooked rice||2 Tblsps corn starch|
|1 cup milk|
Combine 1st five ingredients in a saucepan and heat for ½ hour. Mix corn starch with milk and add to the soup, bring to boil, remove from heat and serve. For more flavor, add pieces of cooked chicken to the first ingredients.
